Every Easter my family colors eggs with onion skins, it is a Russian tradition.
We then each pick an egg and tap each others end of the egg.
The person left with an uncracked end of the egg will have good luck for the year.

COLORING EASTER EGGS

In a large pot put a bunch of onion skins and cover with water. Let that slow boil for 30 minutes. Add eggs and let cook for 10 minutes, till hard boiled.

When you lift the eggs out of the pot, they will be a rich sienna color.

OTHER NATURAL WAYS TO COLOR EGGS

You can use other natural things to get different colors for your eggs.

  • Turmeric for Deep Gold (Boil eggs in solution 30 minutes)

  • Black Coffee for Rich Brown (Boil in black coffee 30 minutes

  • Turmeric for Pale Yellow (Soak eggs 30 minutes at room temperature)

  • Onion Skins for Orange (soak eggs 30 minutes at room temperature)

  • Black Coffee for light brown (soak eggs 30 minutes at room temperature)

  • Beets for light pink (soak eggs 30 minutes at room temperature)

  • Red Cabbage for light blue (soak eggs 30 minutes at room temperature)

  • Red Cabbage for Royal blue (soak eggs overnight at room temperature)

  • Cabbage and Turmeric for Lavender (soak eggs in Turmeric 30 minutes at room temperature and then in Cabbage for 30 seconds)

  • Turmeric and Beet for Chartreuse (soak eggs 30 minutes at room temperature in Turmeric, followed by beets for 5 seconds)

  • Turmeric and Beet for Salmon (soak eggs 30 minutes at room temperature in Turmeric followed by beets 30 minutes at room temperature.)

    EGG FACTS AND FICTION

    BLOOD SPOTS

    Also called meat spots. Occasionally found on an egg yolk. Contrary to popular opinion, these tiny spots do not indicate a fertilized egg. Rather, they are caused by the rupture of a blood vessel on the yolk surface during formation of the egg or by a similar accident in the wall of the oviduct. Less than 1% of all eggs produced have blood spots. In actuality, a blood spot indicates that the egg is fresh. Both chemically and nutritionally, these eggs are fit to eat. The spot can be removed with the tip of a knife, if you wish.

    FICTION

    It is not true that freshness can be judged by placing an egg in salt water. A carefully controlled brine test is sometimes used to judge shell thickness of eggs for hatching purposes but has no application to freshness of table eggs.

    EGG MOM-MUFFIN

    My kids favorite breakfast.

    • English Muffins
    • Boiled Ham (sliced)
    • Eggs
    • American Cheese

    Toast english muffins while you fry the the boiled ham. Remove the fried ham and place on one half of the muffin. Fry the eggs, be sure to bre ak the yolk of the egg, as you fry it. When egg is almost done, place a slice of cheese on top of the egg, when the cheese is melted, remove and place on top of the ham. Place the top of the muffin on top of the egg. You are done.

    SHRIMP QUICHE

      Ingredients
    • 1 can (8 oz) refrig. quick crescent rolls
    • 2 eggs
    • 3/4 c half and half
    • 1/4 c white wine
    •   1 c shredded swiss cheese
    • 1 (4 oz) can shrimp
    • 1 tsp chives or minced green onions    
    •   salt and pepper

    Separate rolls into 8 triangles. Place into 9 inch ungreased pie pan, pressing to form a seamless crust.

    Mix eggs, cream, wine and salt and pepper. Stir in cheese, shrimp and chives.

    Bake 350 degrees - 40-45 minutes until knife inserted into the center comes out clean. Let this set up a few minutes prior to cutting.

    Brunch Pie

    • 1 pkg. (10 oz.) frozen copped broccoli or spinach, cooked and drained
    • 1c. sour cream
    • 1c. cr eamed cottage cheese
    • 1/ c. bisquick baking mix
    • 1/4 c. butter, melted
    • 2 eggs
    • 1/4 c. grated Parmesan cheese

    Heat oven to 350 degrees

    Grease a 9" pie plate Spread broccoli in plate.

    Beat sour cream, cottage cheese, baking mix, butter and eggs until smooth. Pour into greased pie plate.

    Sprinkle with Parmesan cheese.

    Bake 30 minutes. cool 5 minutes

    Stuffed Eggs California (6 servings)

    In the center of each tortilla place 1/4 of the egg and 1/4 of the bacon,leaving about 1 inch of tortilla uncovered. Fold the edges of the tortilla up and around the filling. Place each,seam-side down,on a microwave-safe plate. Top with the cheese.

    Microwave each for 2 minutes. Serves 4

    If you want you can add about 1 tbsp. each of minced onion and green pepper to each burrito before microwaving.

    Cheesy Egg Nests
    This is a recipe my kids like some mornings when time permits.

      We call it cheesy egg nests.

      Line a muffin pans with a slice of bread, crusts removed.  Sprinkle a little grated cheese on base then a layer of ham. Crack an egg into the muffin pan over the ham and then sprinkle grated cheese on top.

      Place in a moderate oven until eggs are set.

      They easily come out of the pan, as the bread toasts in the oven.

      My kids love them.
